Sunset Farms Taco Tuesday

Taco Tuesday is sacred around here. Our ground beef is $5.59/lb for mid-grade — one of the best-priced proteins on the farm, and it's pasture-raised from animals we know by name. A hot skillet, a simple seasoning, good corn tortillas, and fresh toppings from the garden. The whole family is at the table in 20 minutes.

Method

  1. Heat a large cast iron or heavy skillet over medium-high. No oil needed — the fat in the beef will handle it.
  2. Add the ground beef and break it up with a wooden spoon. Let it sit 2 minutes without stirring so it develops a real sear on the bottom. Then break and stir, pushing pieces to the edges. Cook until browned throughout, about 5 minutes total. Drain off excess fat if needed, but leave a little — flavor lives there.
  3. Push the beef to the sides. Add the onion to the center and cook 2 minutes, stirring, until softened. Add the garlic and cook 1 minute more.
  4. Sprinkle in the salt, cumin, chili powder, paprika, and oregano. Stir everything together. Add the water or broth and let it simmer and absorb, 1 to 2 minutes. Taste and adjust seasoning.
  5. While the beef finishes, warm your tortillas. Stack two per taco on each plate.
  6. Spoon the beef onto the tortillas. Set out all the toppings and let everyone build their own. Squeeze lime over everything.

Make it a spread

Add a pot of pinto beans seasoned with cumin and lard, Spanish rice cooked in beef broth, and a bowl of guacamole mashed with lime and salt. Set everything out family-style and call it Tuesday.
